Recipe: Chicken and Broccoli Stir Fry

This is another recipe that I love to make during the week because it's fast, easy, and relatively healthy (especially with a few modifications). You can also swap out the chicken for your favorite meat-- I've made it with skirt steak and it's deeeeee-licious. Pair this with some brown rice, cauliflower rice, or even some ramen noodles. Warning: you may lick your plate!
Chicken and Broccoli Stir Fry
Ingredients
-1 pound chicken (or meat of your choice)
-2 tbsp coconut oil
-1 cup sliced mushrooms
-1 cup broccoli florets
-salt and pepper
-1 tsp sesame oil
-2 tsps crushed garlic
-1 tsp crushed ginger
-1/4 cup Soyaki sauce (or Coconut Aminos or Soy Sauce or Teriyaki Sauce)
Directions
1) Heat a large pan with 1 tbsp coconut oil over medium-high heat. Once oil is melted, add chicken. Cook until heated through (about 5-7 mins, each side).
2) Remove Chicken from pan, add the other tbsp coconut oil. Once melted, add your mushrooms and broccoli. Season with salt and pepper. Add 1 tsp sesame oil. Cook on medium heat about 5 mins, stirring frequently. While veggies are cooking, chop your meat into bite-sized pieces.
3) Add garlic and ginger to the veggie mix. Cook about 30 seconds - 1 minute (until fragrant). Add bite-sized chicken pieces to veggie mix. Mix everything together, then add 1/4 cup soyaki (or sauce of your liking!) Let mixture boil, then reduce heat to medium-low.
4) Cook for 10-15 mins, covered. Spoon mixture into a bowl and ENJOY!
