It's Tuesday, which means it's time for another recipe! This one is one of my favs-- not only is it easy, cheap, and delicious, but you can make it in a variety of ways and pair it with chips and guac (and a margarita!) for a full feast.
I like making this on a Sunday and then saving the rest for Monday night leftovers.
Mexican Casserole
Ingredients
-1 package Flour or Corn tortillas (small size)
-1-2 pounds ground beef, turkey meat, ground chicken, or chicken breast (really any sort of meat!)
-1 package Taco Seasoning
-I can beans (I use black, but whatever kind is fine!)
-1/2 cup salsa
-1-2 cups shredded mexican cheese
-Optional: 1/2 cup corn, tomatoes, black olives
Directions
1) Preheat the oven to 375, spray rectangular pan w/ nonstick spray
2) Cook your meat as directed
3) While your meat cooks, tear the tortilla into strips to create a "crust". Arrange on the bottom of the sprayed pan.
4) Add taco seasoning and 1/2 cup water to the meat mixture. Simmer until boiling. Add rinsed and drained beans to the meat mixture. Cook for 5-10 minutes, or until beans are warm.
5) Layer the bean and meat mixture over the tortillas in the pan. Add your layer of salsa. Add the layer of cheese.
6) Cover w/ aluminum foil and bake for 45 mins. Take the foil cover off and cook for another 10-15 mins, until cheese is warm and bubbly.
7) Cut casserole into squares and serve with guacamole and/or sour cream.
