I'm always looking for fast and easy recipes to cook during the week, but fast and easy doesn't always mean healthy. And sometimes you have to sacrifice taste to satisfy the healthy part. Lucky for us, this recipe that I cobbled together is fast, easy, healthy, and delicious. It's so satisfying on its' own, or you can pair it with some rice or sweet potatoes. If you feel like being a little unhealthy, grab some tortilla chips and make a little extra guac. Yum!
Salmon w/ Corn Guac
Ingredients
Salmon
-Salmon Filet, rinsed and dried
-Salt
-Pepper
-Garlic Salt
-Squeeze of Lemon
-1 tbsp olive or coconut oil
Corn Guac
-1/2 cup Corn (I use frozen)
-1 ripe avocado (or 2 if you're making additional guac)
-1/2 lime juice
-1/8 tsp red pepper flakes
-1/8 tsp garlic powder
-1/8 tsp garlic salt
-1/8 tsp paprika (or cayenne, if you like it hot!)
-Salt and Pepper
1) Prepare your corn, when it's fully cooked, rinse with cold water and drain
2) Peel and smash the avocado in a small bowl. Mix with lime juice and spices. Add corn once it's cool. Cover and refrigerate mixture for at least 10 mins.
3) Meanwhile, put 1 tbsp oil in a large pan and heat over medium heat.
4) Trim, rinse, and dry your salmon filet. Season w/ salt, pepper, and lemon squeeze.
5) Once pan is hot, put salmon skin down on pan. Cook for 5 mins.
6) Flip Salmon, skin side up and sear for another 2-3 mins.
7) Layer the corn guac on the salmon (see pic!)
8) Enjoy!
